It’s almost summer, so that means it’s smoothie season! If you’ve been following along recently, you know that I’ve been on a bit of a smoothie kick lately. Smoothies are a great way to pack in a ton of nutrients into one quick and easy package. Just blend and serve. Plus, you can easily sneak in some leafy greens, some healthy fats and some collagen protein for a filling, nutrient-dense powerhouse that feels like a tasty treat.
This Strawberry Carob Smoothie is just that: a nutrient-dense treat.
It’s also perfect for anyone following a dairy-free, Paleo, AIP or Whole30 diet, as it is free of all dairy, nuts, seeds, and added sugar.
Strawberry Carob Smoothie Ingredients
Strawberries – the best fruit of the season! Feel free to use fresh or frozen – whichever you have on hand
Carob powder – for that luscious chocolatey flavor for those following AIP. If you tolerate chocolate, feel free to substitute unsweetened cocoa.
A date – for a hint of sweetness
Spinach – for a boost of vitamin C, iron, and other nutrients, without overpowering the flavor of this smoothie
Avocado – a healthy fat that adds creaminess, helps keep you full and balances blood sugar
Vanilla powder – for a little extra treat without any extra sugar. Feel free to sub alcohol-free vanilla extract, if you prefer.
Collagen peptides – a great addition for all the benefits of collagen, plus a serving of protein, to help give this smoothie some staying power
Coconut milk – because there is no other, more satisfying way to add that luscious, velvety texture to a smoothie
To make this Luscious Strawberry Carob Smoothie, simply add all the ingredients to a high-speed blender and blend until smooth. If your blender needs more liquid, just slowly add a little at a time until it blends smoothly. Enjoy immediately.
Chew your Strawberry Carob Smoothie
To help balance your blood sugar and to stay fuller longer, it’s best to enjoy your smoothie alongside a small meal. You can also try slowing down and “chewing” your smoothie. I know it sounds silly, but thoroughly chewing your food (including smoothies) is one of the best ways to improve your digestion. Chewing signals the rest of your digestive tract to prepare for the incoming food and make the appropriate digestive juices and enzymes. Ingredients
- 1 cup frozen strawberries
- 1/2 cup frozen spinach
- 1/4 cup frozen diced avocado
- 1 pitted date
- 2 Tbsp carob powder
- 1 scoop collagen peptides
- 1/4 tsp vanilla powder or alcohol-free vanilla extract
- 1 cup liquid of choice (I used 1/2 cup full-fat coconut milk + 1/2 cup water)
Instructions
- Add all the ingredients to a high-speed blender and blend until smooth. If your blender needs more liquid, just slowly add a little at a time until it blends smoothly. Enjoy immediately.
