While brainstorming AIP-friendly Thanksgiving recipe ideas, obviously mashed potatoes and gravy were right at the top of the list with the turkey. But I also wanted to create a versatile gravy recipe that you could use throughout the year, as well. Not just on Thanksgiving. Which means the gravy can’t require pan drippings. You, of course, can add them, if you’d like, but they’re not required.
I wanted something you could whip up on a whim, with the ingredients you have in your pantry, for a variety of dishes. Think: mashed potatoes, turkey, chicken, sausage, biscuits, meatballs, pasta…alllll the things that are delicious smothered in gravy.
And thus, this versatile Easy AIP Gravy was born. Let’s get cookin’!
How to make this Easy AIP Gravy
For this super simple, yet savory and delicious recipe, you’ll need just six ingredients – most or all of which you already have in your AIP pantry.
Here’s what you’ll need:
- 4 Tbsp lard, tallow, or other solid fat of choice
- 4 Tbsp cassava flour
- 2-1/2 cups bone broth
- 1/2 tsp sea salt
- 1/4 tsp dried thyme
- 1/4 tsp dried sage
In a small saucepan, melt the fat over medium heat. Once you’ve melted the fat, add the cassava flour and whisk constantly for 2 minutes.
Then add the broth, salt and seasonings. Continue to stir until the gravy is heated through and has started to thicken, approximately 5-7 minutes. Serve with mashed potatoes, turkey, chicken, biscuits, or whatever your heart desires!
AIP Gravy FAQ
Absolutely! Pan drippings from your Thanksgiving turkey or roasted chicken would be awesome added to this gravy. Add to your heart’s content. You could even brown some sausage or ground pork to use in this AIP gravy for a delicious AIP sausage gravy! This recipe is very versatile and adaptable to however you want to use it.
Because this gravy is so versatile, you can use it almost anywhere. Some brilliant ideas include mashed potatoes, turkey, chicken, sausage, and anything else you’d serve at a holiday meal.
