This Sheet Pan AIP Winter Meal Prep is perfect for easy AIP meal prep bowls, or if you just want a quick and easy weeknight sheet pan dinner! Just chop your veggies and chicken, shake up a quick balsamic sauce and roast away! This super simple recipe has a minimal number of ingredients, but is big on taste!
As many of you know, I love to meal prep. It makes it so much easier to eat well throughout the week when you have healthy grab-and-go meals on hand. And since it’s currently winter, and I love my winter veggies, I thought I’d throw together a quick sheet pan winter meal prep recipe utilizing my favorite 4-Ingredient Balsamic Marinade.

Equipment needed
This super simple recipe requires super simple kitchen equipment. You’ll just need a standard chef’s knife, a cutting board and a couple sheet pans. To avoid over-crowding a single sheet pan, I recommend using at least two. You’ll also need something to mix the marinade in, such as a small mason jar or salad dressing jar.
How to make Sheet Pan AIP Winter Meal Prep Bowls
As I mentioned, this meal prep recipe is modest on ingredients, but big on taste! Here’s what you’ll need for these Sheet Pan AIP Winter Meal Prep Bowls:
- 1 lb chicken breasts or thighs, cut into bite-size pieces
- 1 large sweet potato, peeled and cut into 1/2″ cubes (approx. 2 cups)
- 2 cups broccoli florets
- 2 large carrots, sliced into 1/2″ pieces
For the balsamic marinade, you’ll need:
- 1/4 cup avocado oil
- 1/4 cup balsamic vinegar
- 1 tsp garlic powder
- 1/2 tsp sea salt
Begin by washing and prepping the winter vegetables and cutting the chicken into bite-size pieces. The larger the pieces, the longer the cooking time, so keep ’em small and all about the same size.
Arrange chicken, sweet potato, broccoli florets and carrots on two sheet pans, lined with parchment paper (or well-greased).
Then add balsamic marinade ingredients to a small mason jar and shake well to combine. Drizzle over the chicken and vegetables.
Roast at 425º for 20-25 minutes, or until chicken is cooked through and vegetables are tender.
Let cool and divide among four glass meal prep containers.
When ready to eat, warm in the microwave for 1-2 minutes.
