The dog days of summer are officially here, ladies and gents. Here in the Pacific Northwest, the temps are set to reach 100 degrees this week. That may not mean much to those of you in hotter parts of the country (or world), but to us Portlanders, that’s sweltering. And if you’re in hotter parts of the country, you’ll probably appreciate this recipe even more.
This mango green smoothie is everything you’re looking for to cool off on a hot summer day! The mango is juicy and oh-so-satisfying. The spinach provides a boost of nutrients we all could use, without being overpowering. And the ginger adds just the right amount of zing for a crisp, invigorating flavor!

Ingredients you’ll need for this Mango Ginger Green Smoothie (Paleo, AIP)
- fresh or frozen mango
- freshly grated ginger
- fresh or frozen spinach
- grass-fed collagen peptides
- filtered water and/or ice
Given that it’s currently summer, mangos are in season. If you have fresh mangos, you can use them in this recipe. You’ll just probably want to reduce the amount of water you use and add a few ice cubes, for extra chill. I had frozen mango on hand already, so that’s what I used.
For freshly grated ginger, I have a pro tip for you! Buy a haul of fresh organic ginger root when it looks best at your favorite farmer’s market or grocery store. Then, wash and scrub it really well (no need to peel). Dry it off on some paper towels and put it in an airtight container in the freezer (I usually just stick them in a small stasher bag). When you need some freshly grated ginger, just grab a piece from the freezer and grate it (from frozen!). It’s super easy, and works great for use in quick and easy recipes like this.
For the spinach, you can use fresh or frozen. I usually buy a big container of pre-washed organic spinach at the grocery store and just stick it straight in the freezer to use in smoothies like this Mango Ginger Green Smoothie. That way, I make sure to get some greens in my day, and I don’t have to worry about using it all up ASAP, before it wilts in the fridge.
Grass-fed collagen peptides provide a protein boost and may help support healthy hair, skin and nails, as well as a healthy gut lining.
To make this Mango Ginger Green Smoothie, just toss your ingredients in your favorite high-speed blender and whiz away! Pour into a glass or your favorite smoothie mug and enjoy!

Ingredients
1 1/2 cups fresh or frozen mango
1/4 tsp freshly grated ginger root
1–2 cups spinach
1 scoop grass-fed collagen peptides
1 1/3 cups filtered water
1/2 cup ice (optional)
Instructions
Combine mango, ginger, spinach, collagen and filtered water in a high-speed blender. If using fresh mango, reduce the amount of water and add about 1/2 cup ice. Blend until smooth and enjoy immediately.

Use as much spinach as you’d like, for additional phytonutrients. I usually just throw it in smoothies by the handful, but more than two big handfuls starts to overpower the taste, in my opinion.
