These quick and easy sheet pan chicken fajita bowls are not only delicious, they’re also Paleo and Whole30 compliant! Coming together in 30 minutes flat, these make a perfect weeknight dinner or meal-prepped lunch.

In need of a quick, healthy weeknight dinner? Aren’t we all? As you may have noticed by the recipes I post on this blog, I like to keep my recipes short and sweet, with minimal ingredients and maximal flavor. As a working woman with a (nearly) 2-hour commute (total) and a hungry husband to feed (seriously – how does so much food fit in one human?), I just don’t have time for lengthy recipes with tons of exotic ingredients and hundreds of steps to get from fridge to table. And I’m guessing you don’t either? You’ve come to the right place.

The good news is, you don’t need a ton of ingredients to make flavorful, satisfying, healthy meals. You just need quality ingredients.

And that’s where this Easy Paleo Chicken Fajita Bowls recipe comes in!

What you need to make Easy Paleo Chicken Fajita Bowls

These fajita bowls require just four main ingredients (choose organic and in-season when possible, for maximum flavor and health-promoting benefits):

  • juicy organic chicken thighs
  • crisp bell peppers
  • savory onions
  • crisp spring greens

That’s it! All you have to do is slice your chicken, peppers and onions, arrange on a sheet pan, season to perfection and roast! Then arrange on top of your greens with a fresh squeeze of lime juice. The result is a colorful, flavorful meal you can feel good about eating. And you didn’t have to spend your whole day in the kitchen!

If you’re feeling ambitious, or if you just want to mix it up, you can top your paleo chicken fajita bowls with some delicious fajita toppings. For my paleo chicken fajita bowls, I included some cauliflower rice, mashed avocado, green onion slices and a sprinkle of hemp seeds for some added omega 3’s.

Topping ideas for these Easy Paleo Chicken Fajita Bowls:

  • salsa
  • avocado/guacamole
  • dairy-free sour cream (cashew cream sauce works great here, too)
  • cauliflower or broccoli rice
  • lime slices
  • sprinkle of seeds (i.e. hemp seeds, chia seeds, pepitas, etc.)
  • slices of green onion

Ingredients

1 yellow onion, cut in half and thinly sliced

3 bell peppers, sliced

1.5 lbs chicken thighs, sliced

2 Tbsp avocado oil

2 tsp chili powder

2 tsp garlic powder

2 tsp cumin

2 tsp kosher salt

8 cups mixed greens


Instructions

Preheat oven to 425ยบF.

Arrange onion, bell pepper and chicken on a sheet pan. Drizzle with avocado oil and sprinkle evenly with chili powder, garlic powder, cumin, and kosher salt.

Roast in the oven for 18-25 min, or until the chicken is cooked through (internal temperature reads 165ยบ) and the veggies are tender-crisp.

Divide mixed greens among bowls and top with sheet pan fajita mixture.

Eat as is, or top with your favorite fajita toppings. Some of my favorite toppings include salsa, avocado/guac, dairy free sour cream (cashew cream works excellently here, as well), cauliflower rice and a couple squeezes of fresh lime.
