This AIP Crock Pot Chicken Teriyaki is the easiest recipe you’ll ever make. Mix the sauce, add to the chicken & let the crock pot do the rest. It even makes enough sauce to drizzle over a side of steamed veggies!
You guys may already know this about me, but I am a very lazy cook. Don’t get me wrong – I love to cook, and I love delicious, healthy, homemade food. But I hate following long, complicated recipes. I want simple, quick and easy recipes with minimal ingredients! And I want them to taste good! And make me feel good!
Are you the same way?
If so, this AIP Crock Pot Chicken Teriyaki recipe is for you! If you’ve got a well-stocked AIP or Paleo pantry and fridge, you’ve probably already got everything you need to make this recipe. No need for extra trips to the grocery store, or the farmers market to pick up specialty ingredients. Just 6 ingredients and 5 minutes of hands-on time, and you’re good to go!
Plus, this recipe is awesome for meal prep! Just make it ahead, divide into individual portions and heat it up in the microwave when you’re ready to eat.
Equipment needed
The only equipment you’ll need for this AIP Crock Pot Chicken Teriyaki is a positive attitude!
Just kidding.
You’ll also need a Crock Pot, slow cooker, or Instant Pot (that has a slow cooker function). Plus, measuring spoons and measuring cups. And maybe a small mixing bowl and whisk. Though, I have definitely mixed this sauce with a spoon in a standard cereal bowl before, so you do you.
Ingredients for the Easiest Crock Pot Chicken Teriyaki
Like I said, the ingredients for this recipe should already be in your fridge or pantry, which is what makes this recipe so great. You hardly even have to plan it! Here’s what you’ll need:
- 1 lb chicken breasts or thighs
- 1/2 Tbsp arrowroot starch
- 1 Tbsp water
- 2 tsp garlic powder
- 2 tsp ground ginger
- 1 Tbsp honey
- 3/4 cup coconut aminos
Just add your chicken breasts or thighs to your slow cooker (thighs are always my favorite, but you do you!).
Then, in a separate bowl, mix together the arrowroot starch (sometimes called arrowroot flour) and water first. Combining arrowroot with water helps it mix better with other ingredients. Sometimes, if you don’t do this step first, the arrowroot gets….chunky. And we don’t want chunky sauce. Gross!
Once the arrowroot and water are well-combined, add the rest of the ingredients (garlic powder, ground ginger, honey and coconut aminos) to the mixing bowl and mix again, until you get a tasty sauce. Then, pour that delicious sauce right over your chicken in the slow cooker, cover and cook on low for 4-5 hours. You may need a little bit more time, depending on how large your chicken pieces are. Just check that it’s fully cooked and move on to the next step.
Then, shred the chicken with two forks (I just do this right in the crock pot) and stir to fully cover the chicken in sauce. Dinner is served!
What to serve with this AIP Crock Pot Chicken Teriyaki
The great thing about this recipe is it’s so versatile! I typically serve it over cauliflower rice, but you can use regular white rice if you’re not following AIP or Paleo. Plus, I like to pack in as many veggies as possible, so I also often serve it with a side of steamed or roasted broccoli. Steamed or sauteed shredded cabbage and/or carrots also pairs well. It also goes great with zucchini and/or red peppers (which are not AIP, but they are Paleo). Or eggplant and snow peas (neither of which are AIP, but they are Paleo).
I’m actually struggling to think of a vegetable this wouldn’t pair well with. Go wild! Cook what’s in season!
