Description

This Chai-Spiced Edible Cookie Dough recipe is not only a tasty AIP or Paleo treat, it’s also packed with gut-healing collagen protein!


Ingredients

Scale

3 Tbsp collagen peptides

1 cup tigernut flour

1/4 cup coconut flour

1/4 tsp vanilla powder (or alcohol-free vanilla extract)

1/2 tsp ground cinnamon

1/2 tsp ground ginger

1/4 tsp ground cloves

1/4 tsp ground mace

pinch of sea salt

1/2 cup coconut oil, melted

1/4 cup raw honey


Instructions

Add all dry ingredients to a medium mixing bowl and whisk to combine and break up any clumps.

Add coconut oil and honey to the bowl and stir well with a spatula to combine.

Optionally, scoop into bite-sized balls, rolling together with the palms of your hands to create cookie dough balls. (One batch makes about 15 cookie dough balls).

Store in an airtight container in the fridge for up to 5 days or in the freezer for several months. If frozen, bring to room temperature before eating.
