Raise your hand if you love chai!! I am a huge fan of chai-flavored everything. When I first tasted a chai tea latte, I was instantly hooked for life. Then came chai-spiced scones, cookies, pudding, pancakes – basically, chai-spiced everything. So, when I was developing some smoothie recipes to help sneak in my daily fruit and veggie servings, of course I had to develop an AIP-friendly Chai Collagen Smoothie. And baby, this Chai Collagen Smoothie does not disappoint!
It’s super simple to make, but packs in a ton of nutrients, fiber and anti-inflammatory spices for the perfect breakfast, snack or dessert. Plus, it’s AIP and Paleo friendly, and has no added sugars, so those of us on healing protocols can enjoy the delicious flavors without the blood sugar spike or pro-inflammatory ingredients.
What’s in this Chai Collagen Smoothie?
The ingredients list for this Chai Collagen Smoothie is fairly short and super simple. You probably already have everything on hand. The one ingredient you may not have is frozen chopped zucchini. But let me tell you – go stock up on zucchini while it’s in season, chop it up and freeze it for smoothies all year long. It’s the perfect vegetable for the creamiest smoothies and I swear you don’t taste it! Zucchini’s flavor is so mild, and it adds a ton of creaminess, so you can pump up the flavor with anti-inflammatory herbs and spices and knock out a serving of vegetables every time you drink a smoothie.
Here’s what you’ll need:
- Water, coconut milk or tigernut milk (my favorite is coconut milk, but you do you)
- Frozen, sliced banana
- Frozen, chopped zucchini (fresh works, too)
- Coconut oil (adding a healthy fat helps slow digestion and balance blood sugar)
- Chai spices: mace, cloves, vanilla, ginger and cinnamon
- Collagen peptides
Add everything to your favorite high-speed blender, give it a whizz and enjoy!

Ingredients
1.5 cups water, coconut milk or tigernut milk
1 cup frozen sliced banana
1 cup fresh or frozen chopped zucchini
1 tsp – 1 Tbsp extra virgin coconut oil (see notes)
1/4 tsp each: ground mace, ground cloves & vanilla powder
1/2 tsp each: ground ginger & ground cinnamon
1 scoop collagen peptides (about 1.5 Tbsp)
Instructions
Combine all ingredients in a high speed blender and blend until smooth. If smoothie is too thick, add a little bit of water at a time until it blends better. Enjoy!

Add coconut oil to your preference. Some people experience digestive distress with too much coconut oil, so start with 1 teaspoon and work your way up to 1 tablespoon, if desired.
Many blenders work best if you add the liquid first, and then the other ingredients.

My favorite is Wild Foods vanilla powder, but any gluten-free vanilla powder that the only ingredient is ground vanilla beans should work. You can also try alcohol-free vanilla extract.
