Chai Collagen Bliss Balls (Paleo, AIP, Nut-Free)

These simple Chai Collagen Bliss Balls are easy to whip up for a tasty fall treat. They’re AIP, Paleo, nut-free, and require zero baking! Best of all, they’re packed with vital nutrients, protein and fiber for a flavorful treat you can feel good about.

In case you couldn’t tell by all the chai-spiced recipes that have been going up on the blog lately, I am a huge fan of all things chai. And after these Coconut Collagen Bliss Balls and Carob Collagen Bliss Balls were such a hit, I thought I would create a fall-inspired version of them.

These Chai Collagen Bliss balls are so super simple to make, and they’re absolutely perfect for a small treat to have on hand to curb sugar cravings without eating an entire piece of pie. Plus, they store really well in the freezer, so you can make a bunch and just grab one tiny treat when the craving strikes.

Bonus points: they’ve got a little punch of gut-loving protein, thanks to the collagen peptides in the recipe. For more info on the benefits of collagen, see the Carob Collagen Bliss Balls post.

How to make Chai Collagen Bliss Balls

The main equipment you’ll need is a food processor. If you don’t have one, you can try to make these in a high-speed blender, but I wouldn’t recommend it. I haven’t tried it, but it seems like a blender wouldn’t be strong enough for the dense dates. If you do try it, let me know how it goes in the comments.

Ingredients

  • 1/4 cup flaked or shredded coconut (unsweetened)
  • 1/4 cup coconut flour
  • 3 Tbsp grass-fed collagen peptides
  • 1 tsp ground cinnamon
  • 1/4 tsp ground ginger
  • 1/8 tsp each ground mace and ground cloves
  • pinch of sea salt
  • 1 cup pitted medjool dates, soaked and drained
  • 1/4 cup coconut butter

Directions

Pit dates and soak them in warm water for 10 minutes.

While dates are soaking, add the coconut flakes, coconut flour, collagen peptides, cinnamon, ginger, mace, cloves and sea salt to a food processor and pulse a few times to mix.

Drain dates and then add the drained dates and coconut manna to the food processor and pulse until everything is well-combined. The dough will begin to stick together and form a large ball.

Use a small spoon or mini cookie scoop to scoop the mixture into about 16 small scoops on a parchment-lined cookie sheet. Once there are 16 scoops on the sheet, roll them with your hands to form uniform balls and place back on the parchment paper.

Transfer to the fridge to chill for 30-60 minutes, then enjoy!

Store in an air-tight container in the fridge for up to a week, or in the freezer for up to a month. If frozen, bring to room temperature for a few minutes before biting into them.
