I don’t know why, but so many carrot recipes have added sugar in them – whether it’s maple syrup, brown sugar, or honey. Carrots are sweet enough on their own, especially when you roast them to crispy, caramelized perfection. They don’t need any added sugar, in my opinion.
So, I set out to make a savory version of Balsamic Roasted Carrots, and I think it turned out perfectly! You just need 5 ingredients and a few minutes of hands-on time, and you’ve got a rich, slightly-sweet, slightly-savory side dish you can serve with just about anything.

How to make Savory Balsamic Roasted Carrots
You’ll need just five ingredients:
- 5-6 whole organic carrots
- 2 Tbsp balsamic vinegar
- 2 Tbsp avocado oil
- 1 tsp dried parsley
- 1/4 tsp sea salt
Preheat oven to 400ºF. Wash carrots (no need to peel if using organic) and slice diagonally, about 1/2″ thick (the thicker they are, the longer they’ll need to roast).
Combine balsamic vinegar, avocado oil, dried parsley and sea salt in a medium bowl. Whisk to combine. Add sliced carrots and toss to coat.
Arrange carrots in a single layer on a greased baking sheet. Roast at 400ºF until fork-tender and slightly charred (about 25-30 minutes), and serve!
