I don’t know about you, but I am getting tired of the same ol’ quarantine food we’ve been eating since beginning to maintain physical distancing for COVID-19 almost two months ago. I’ve stocked up on plenty of meats, pantry staples and hearty vegetables. And we go shopping for fresh veggies about once every two weeks. But everything is starting to taste the same.
So I started to brainstorm ways to mix it up, while still keeping our meals simple, quick and easy and I realized marinades are the answer! If you can eat a simple combo of meat + fresh veggie + starchy veggie every day, but mix up the flavors, you may never get bored!
First up on the flavor train is this 4-Ingredient Balsamic Marinade.
I threw this balsamic marinade together in less than two minutes the other day, marinated some chicken breasts in it for a few hours, and then pan fried them, and they were to. die. for. The balsamic chicken breasts were even good as leftovers the next day.
I don’t know about y’all, but my husband and I are not fans of chicken breasts. They always seem to turn out dry, no matter what you do.
But not anymore! This balsamic marinade made them so juicy and tender, I wanted to eat them for every meal until they were gone. And then make them again, so I could eat moooore!
Easy Balsamic Marinade Ingredients
This balsamic marinade is suuuuuper easy. You only need 4 ingredients, and they are ALL pantry staples! #quarantinewin
- Avocado oil (or olive oil)
- balsamic vinegar (avoid any with added sugars, thickeners, or colorings)
- garlic powder
- sea salt
Easy peasy, lemon squeezy!
Just measure your ingredients into a small mason jar, screw the lid on and shake!
Then pour it over chicken, steak, pork, fish, shrimp or some vegetables, marinate, then cook! For meat, marinate up to 24 hours. For seafood and vegetables, just marinate it for about 30 minutes (any longer and it gets slimy!).
When it’s done marinating, discard the marinade and cook your meat, seafood or vegetables as usual. Try grilling, roasting or pan-frying. Yum yum!

Ingredients
1/4 cup avocado oil (or olive oil)
1/4 cup balsamic vinegar (avoid any with added sugars, thickeners, or colorings)
1 tsp garlic powder
1/2 tsp sea salt
Instructions
Place all ingredients in a small mason jar, seal and give it a good shake.
Use it to marinate chicken, steak or pork (up to 24 hours), or seafood or veggies (30 min).
Drain marinade and discard. Then cook your meat, seafood, or veggies as usual.
