Savor the summer flavors of this AIP Lemon Basil Grilled Chicken! A quick lemon basil marinade produces juicy chicken you’ll gobble right up.
Ingredients
2 lbs chicken breasts or thighs
For the Lemon Basil Marinade:
- 1/4 cup fresh lemon juice
- 1/4 cup olive oil
- 2 tsp dried basil
- 1 tsp sea salt
- 1 tsp garlic powder (omit for low FODMAP)
Instructions
Add marinade ingredients to a mason jar and give it a good shake. Pour over chicken (either in a glass dish or plastic zip-top bag) and marinate for at least 30 minutes, up to 24 hours.
Preheat your grill to medium (350-400°F).
Remove chicken from marinade and discard any leftover marinade. Transfer chicken to hot grill and cook for 4-5 minutes per side, or until internal temperature reaches 165°F. Remove chicken on a clean plate and let rest for 5 minutes before serving.
