As you may already know, I am all about simple, delicious recipes that save me time in the kitchen. And it doesn’t get much easier than a slow cooker meal! Just toss a few things in your crockpot, walk away and come back to a fully-prepared meal, ready just when you’re ready.
How to make this AIP Crockpot Creamy Ranch Chicken & Potatoes
Ingredients
First, you’ll need to gather a few simple ingredients:
Chicken Breasts
Feel free to sub in chicken thighs, if you prefer.
Japanese sweet potatoes
These are sometimes called white sweet potatoes. If you are not following AIP, or if you have successfully reintroduced white potatoes, feel free to use them instead.
Carrots
Good ol’ classic carrots go with everything, don’t they?
Ranch Seasoning
I created my own blend of AIP-compliant ranch seasoning using dried chives, dried parsley, dried dill, garlic powder, onion powder and sea salt. It’s not as easy as using a mix you can find in a packet at the store, but who knows what’s actually in that stuff.
Coconut Milk
Use the full-fat coconut milk you find in a can. None of that watered down, preservative-packed stuff you find in the refrigerated section.
Directions
First, wash and prep the Japanese sweet potatoes and carrots. Add them to the bowl of a slow cooker. Top with chicken breasts. Sprinkle everything with the herbs and sea salt and pour the coconut milk over everything.
Cover and cook on high for 4-5 hours or low for 7-8 hours. Give it a little stir and serve.
Optionally, top your AIP Creamy Ranch Chicken with AIP compliant bacon bits!
If you have any leftovers, save them in an airtight container in the fridge for up to 3 days.

- 2 medium Japanese sweet potatoes (aka white sweet potatoes), cut into large cubes
- 3 large carrots, cut into disks
- 3/4 tsp dried chives
- 1/2 tsp dried parsley
- 1/2 tsp dried dill
- 1/4 tsp garlic powder
- 1/4 tsp onion powder
- 1 1/2 tsp sea salt
- 1 cup full fat coconut milk
- Optional: AIP bacon bits for topping
