How to make this Quick & Easy Creamy Cucumber Salad
First, you’ll want to whip up a quick batch of AIP Ranch Dressing. I promise you, it will come together SO quick. In a pinch, I’ve literally just thrown everything into a jar and mixed it with a spoon in under a minute and it worked perfectly.
Once you have the dressing, chop a cucumber, grate a carrot, slice some radishes, and toss it with a few tablespoons of the AIP ranch. Done and done!

Absolutely! Red onions are a popular addition to cucumber salads. As are tomatoes (not AIP). Go ahead and use whatever fresh veggies you have on hand. I’m sure they’ll all pair nicely in this salad.
Any dressing would go well with this salad, really. Even if you don’t want it creamy, you could just toss it with a drizzle of olive oil, vinegar and a sprinkle of sea salt and it would still be delicious.
Cucumber salad is generally best served fresh, but if you want to prep it ahead of time, just prepare your veggies and dressing separately and combine just before eating.

Ingredients
1 large English cucumber, quartered lengthwise and chopped
1 large carrot, shredded
4 medium radishes, thinly sliced
4 Tbsp AIP Ranch Dressing
Sea salt, to taste
Optional: top with fresh dill
Instructions
Wash and chop your cucumber, shred the carrot and thinly slice the radishes (using either a mandoline, or a sharp knife).
If you don’t have AIP Ranch on hand already, whip up a quick batch (it will take about 2 minutes, promise). Use 3-4 Tbsp, depending on how creamy you want the cucumber salad. Toss to coat and serve fresh. Add sea salt to taste, if desired. Optionally, top with freshly chopped dill.
