These easy oven-baked chicken tenders require just 4 ingredients and are Paleo, AIP, Keto, gluten-free, coconut-free and straight-up heavenly! Healthy comfort food your whole family will love.

If you’ve got a fast-food hankering, but are trying to stick to your health goals, these are the chicken tenders for you! These AIP chicken tenders are juicy, crispy and flavorful, thanks to a simple crumb mixture of pork panko and nutritional yeast. They’ll satisfy your cravings without any gluten, dairy, soy, eggs, nuts or even coconut! Plus, they’re oven-baked for optimal crispiness without the added grease of frying.

Oven-Baked AIP Chicken Tenders Ingredients

You’ll need just four ingredients and about 30 minutes to prepare these Oven-Baked AIP Chicken Tenders. Here’s what you’ll need:

Chicken breast tenders – of course

Avocado oil – to replace the eggs in typical chicken tenders recipes and help the crumb mixture stick to the chicken

Pork panko – for that killer crispiness

Nutritional yeast – for an extra boost of savory, nutty flavor

How to make Oven-Baked AIP Chicken Tenders

Preheat oven to 425ºF. Line a sheet pan with parchment paper, aluminum foil or a silicone mat (for easy clean-up) and place a roasting rack on top. (You can also use an oven-safe cooling rack if that’s what you have).

Combine pork panko and nutritional yeast in a bowl and mix together. Add avocado oil to a separate bowl.

Use a paper towel to dry off the chicken tenders. One by one, dip them in the avocado oil (making sure to drain well) and then the panko mixture (making sure to cover completely and as thickly as you can). Then place on the roasting rack.

Roast the chicken tenders at 425ºF for 17-25 minutes, flipping halfway through. Serve with your favorite AIP dipping sauce and enjoy!

Quick Tips

  1. When you dip the chicken in the avocado oil, be sure to let it drain off a bit. You want just enough that the crumb mixture sticks to the meat, but not so much it gets gloppy. Otherwise, the crumb mixture won’t crisp up.
  2. Be sure to use a roasting rack or cooling rack, so the heat can get under the chicken tenders and help the crumb mixture to crisp up. It also helps to flip the chicken tenders halfway through cooking, so both sides get the chance to crisp under the oven heating element.
