Ingredients

Units Scale
  • 5 cups filtered water
  • 5 tea bags (use rooibos for caffeine-free or black for caffeinated)
  • 2 inch piece fresh ginger, thinly sliced (no need to peel; just rinse thoroughly) (makes roughly 2 Tbsp)
  • 3 cinnamon sticks
  • 2 tsp whole cloves
  • 2 tsp alcohol-free vanilla extract
  • 1/8 cup honey or maple syrup

Instructions

  1. Bring 5 cups filtered water to a rolling boil. Turn off the heat and add tea bags, ginger, cinnamon sticks, cloves, vanilla extract, and your sweetener of choice. Cover and steep for 20 minutes.
  2. Using a fine mesh strainer, strain the concentrate into mason jars or your storage container of choice, and store in an airtight container in the fridge to use throughout the week.
  3. To serve, combine 1/2 cup concentrate with 1/2 cup coconut milk or other AIP-friendly milk alternative. Warm on the stovetop or in an electric milk frother, or serve over ice for an iced chai.
