Description

This AIP Cauliflower Gratin is light and delicious, and super easy to make – just add ingredients to a baking dish and bake!


Ingredients

Scale

1 large head cauliflower, cut into small florets

2 Tbsp avocado oil (or other oil of choice)

2 Tbsp bone broth (or vegetable broth)

1/2 tsp sea salt

1/4 tsp onion powder

1/4 tsp garlic powder

1/4 tsp dried minced onion

3 tsp AIP parmesan


Instructions

Preheat oven to 350°F.

Add cauliflower florets, avocado oil, broth, sea salt, onion powder and garlic powder to a 2.5 qt baking dish and toss to combine.

Top with AIP parmesan and dried minced onion.

Cover and bake 30-60 minutes, depending on the type of baking dish you use (I used a deep ceramic dish and it took about 50 minutes). When cauliflower is cooked through, remove cover and bake for another 10 minutes, until top begins to brown.

Serve hot.

Notes

Saves in an airtight container in the fridge for up to 3 days. To reheat, pop in the oven for a few minutes, until warmed through.
