I don’t know about you, but when Thanksgiving and Christmas come around, I am alllll about that apple crumble! Pies and cakes are delicious, but crumbles and crisps are where it’s at.
Unfortunately, all of these traditional holiday desserts aren’t celiac-friendly. And they definitely aren’t AIP-friendly. As Thanksgiving is fast-approaching, I’ve been brainstorming simple recipes for a full-on AIP-friendly Thanksgiving spread that I can easily prepare, without my family feeling deprived of a traditional Thanksgiving.
First on the agenda is this simple, 5-Ingredient Crockpot Apple Crumble. One of the best things about this AIP Apple Crumble is that it’s made in the crockpot, for an easy, set-it-and-forget-it dessert that won’t take up precious oven space. And you won’t have to try to juggle making multiple recipes at once, because you can set this first and then move on to the other dishes that take more hands-on time.
Plus, as you know, I am all about simplicity. Especially when it comes to holiday food. If I don’t have to worry about complicated recipes, I don’t have to worry about one dish burning while I tend to another dish. This AIP Apple Crumble can be prepped, set, and forgotten until time for dessert. If you set your Crockpot to “warm” after it’s done cooking, it will keep the AIP Apple Crumble at the perfect temperature until everyone’s ready for it. No lukewarm dessert for you!

How to make this Crockpot AIP Apple Crumble
Equipment you’ll need
First, you’ll need a Crockpot or other slow cooker. If you have an Instant Pot with a slow cooker function, that will work too. Then, you’ll need a cutting board and chef’s knife, and a vegetable peeler.
AIP Apple Crumble Ingredients
You can use any type of apple you’d like. I prefer Granny Smith, because they add a bit of tartness that I enjoy in sweet desserts. This AIP Apple Crumble is the perfect amount of sweetness, in my opinion. It’s not overly-sweet at all, but also not too tart. If you use another type of apple, you may need to adjust the amount of maple syrup you use, or it might become too sweet. Especially if you add AIP ice cream or coconut whipped cream on top.
Here’s what you’ll need:
- 4 Granny Smith apples, peeled, cored and diced
- 1/4 cup maple syrup
- 2 Tbsp cassava flour
- 1 tsp ground cinnamon
For the crumble topping:
- 1 cup cassava flour
- 1/4 cup coconut oil, melted
- 1/4 tsp ground cinnamon
Instructions
Peel, core and dice your apples and add them to the Crockpot. Add the maple syrup, 2 Tbsp cassava flour and 1 tsp ground cinnamon to the pot and toss to evenly coat the apples.
Add the crumble topping ingredients to a small mixing bowl and stir to combine. Mixture will be crumbly. Sprinkle over the diced apples.
Cover and cook on high for 2.5 hours. Enjoy with a scoop of AIP ice cream, coconut whipped cream, or as is.
FAQ
Absolutely! There’s plenty of room left in the crockpot to double this recipe, though I haven’t tested it. My guess is that you can double the recipe and just add an extra half an hour to the cooking time to account for the extra volume.
Any leftovers you have of this AIP Apple Crumble can be stored in an airtight container in the fridge for up to three days. I divided mine up into serving-size mason jars, for easy post-Thanksgiving treats. To reheat, just pop in the microwave for about a minute, or heat in an oven or toaster oven at 350ºF for a few minutes. Make sure your container is oven and/or microwave safe. You can also enjoy the leftovers cold, right out of the fridge, but I enjoy them more when they’re warm.
